Course Overview

The Culinary Skills qualification can help the learner become a chef or progress to a more senior chef’s role. They will gain a high standard of cookery skills and have the option to learn other workplace essentials like health and safety in a kitchen.

The Culinary Skills qualification are for anyone who works or wants to work as a chef in the catering and hospitality sector. The Level 2 Culinary Skills qualification will suit learners who have some basic skills and experience as a chef, probably from a role where you work under supervision or want to gain a formal qualification and increase your skills so that you can take on a more senior role.

It is also ideal for those chefs in industry who would like to continue to refresh their knowledge by undertaking topics within the qualification.

Course information

Modules will include:

Prepare and cook stocks, soups and sauces
Prepare and cook fruit and vegetables
Prepare and cook meat and offal
Prepare and cook poultry
Prepare and cook fish and shellfish
Prepare and cook rice, pasta, grains and eggs
Prepare and cook hot and cold desserts and puddings
Prepare and cook paste products
Prepare and cook biscuit, cake and sponge products

Full-Time 1 Year

Practical skill build sessions, real working environment sessions and the classroom

You will be continually assessed in a variety of ways including assignments, practical synoptics and multiple choice question

Level 2 City & Guilds Diploma in Culinary Skills

You will have the opportunity to work in our new college restaurant, Langley’s, preparing, cooking and serving a variety of seasonal, classical dishes to the local community and regular clientelle. You will also be required to undertake a 2 week industry work placement in your chosen hospitality and catering environment.

Progression to a level 3 qualification in Professional Cookery or senior production chef / chef de partie apprenticeship.

Level 2

Included in this programme of study, you will undertake a qualification in Level 1 Professional Food and Beverage Service Skills and Level 2 Food and Hygiene Safety.

You will be required to purchase Langley’s Restaurant, back and front of house fully branded kit list, equipment and course resources prior to course commencement, this can be obtained from our dedicated web page on our partner Russums’ website.
