What's covered?

If you are looking to change career or improve your prospects, our six week fast-track course in professional cookery will teach you the basic skills to become an entry-level chef, giving you a good grounding in basic cookery skills and food safety.

Most of the people who enrol on this course have no prior experience - we'll teach you everything you need to know and help you to achieve an industry-recognised qualification, preparing you for your new career. All our lecturers are qualified professionals with real industry experience. You will learn in our professional training kitchens and our working restaurant, which feature the latest industry equipment. The course is made up of 12 units:

  • Food safety in catering
  • Introduction to the catering and hospitality industry
  • Health and safety awareness for catering and hospitality
  • Introduction to healthier foods and special diets
  • Introduction to kitchen equipment
  • Introduction to personal workplace skills
  • Prepare and cook food by boiling, poaching and steaming
  • Prepare and cook food by stewing and braising
  • Prepare and cook food by baking, roasting and grilling
  • Prepare and cook food by deep frying and shallow frying
  • Regeneration of pre-prepared food
  • Cold food preparation

What do you need?

There are no formal entry qualifications although you will be required to take a College assessment. You will also require enthusiasm, motivation and a proven commitment to hard work, good time keeping and a desire to learn.

What could this lead to?

Our Professional Cookery Diploma Level 1 course is accredited by City & Guilds and is recognised within the industry, so you can go straight into employment, move on to an apprenticeship with a local business or progress on to the Level 2 Diploma to further increase your earning potential.

The hospitality and catering sector is one of the biggest employers in the region, so you should not be short of options. There is a vast array of local career opportunities, from becoming a commis chef or waiter/waitress in a restaurant or hotel to roles in catering companies, conference centres, gastropubs, cafés and other catering establishments. On average, a commis chef in the UK can earn around £21,000 per year (source: Totaljobs.com 2017).
